Mono v. Stereo recording

Thanks Hixmix. Once again, I see listening is the tell tale sign. That is what I usually do, but I'm so new it is hard to tell if it's right or wrong at this point.

One other question: Can you pan a stereo track or would you even want to:

Is there a particular instance when one is better than the other? I am very new to recording and am unsure of the logic behind which to use. Thanks for your help.

Do you have a "mono" switch on your mixing console?
Use it and your ears to compare stereo vs. mono.
Stereo gives more of a sense of spatial separation.

Some musicians find it easier to lay down tracks while listening to the mix in mono. For me, it depends on the song I'm mixing.
 
Yes and yes. But in most cases you probobly won't.
