MIDI Help

I'm an idiot and in dire need of MIDI help. (I have version 3.0.1 of n-track) I've read the n-track manual and help instructions and I still feel like I'm in a foreign land. If someone could please explain, from the beginning, and in simplistic terms, how MIDI works. Here is my basic setup - I have a Sound Blaster soundcard that uses the joystick output as the MIDI output as well. I have a Roland JX-8P keyboard/synth with MIDI In/Out and Thru. As it stands I am using the In and Out MIDI plug from the synth to the MIDI control on the soundcard. So, what now? How can I get.... started? When I try to play something on the Roland, all I get, after pressing record, is a normal wave file, no MIDI. Plus, in the help section, it says to change the microphone picture to the MIDI picture (on the toolbar - a keyboard) but in this version of n-track, I don't see the damn thing. I recall it was on an older version but that doesn't help me now. I'm such a neophyte that I wonder if I'm even using the right terminology. I don't know anyone in person that can walk me through this or I'd pay them to sit here and hold my virgin hand. Can anyone please help? Any and all would be greatly appreciated. Monosyllabic words are not required but the simpler the better. Thanks,

First, make sure you have your sonudcard selected in File/Preferences/Midi Settings/Midi Devices.....

If that Audio/Midi selector isnt on your graphic toolbar, you can click on the top toolbar Action/Record Mode and you should get a dropdown menu of Audio,Midi, and Audio+Midi......
 
OK, I have the input port as SB AudioPCI MIDI In and the output port as 1-SB AudioPCI MIDI Synth. (I tried a test with the Metronome on this setting and heard the drum beat so I'm assuming that set up works..?) I also, as the manual said, have the Auto button marked for the echo and the "keep devices open" marked as well. So, what's next? Thanks...
