The real answer

Great thread. Lots of fun.

Back in the day field recording was done to stereo. Open reel, cassette, DAT, you get the idea.

The most frequently used mic setup for these stereo decks was a pair of dynamic omnis.

As far as the best goes it is generally said to be the EV RE55. About $300 a pair used. Cheap. Very flat response.

I usually don't discuss mics I haven't used but there seems to be a strong consensus on this. (RE55 = good)

Of course less expensive dynamic omnis like the EV RE50 (or 635a) are often used. The RE50 has attenuated bass and treble response which often makes them the better choice. Depending on what you're recording and the conditions around you.

So if you want to record all the instruments in the world, and there have been many who have traveled extensively with that goal in mind, two dynamic omnis would be the mic setup of choice.
