What is the best way to mic a piano only using one mic?
 
I'd move the mic around in 5-10 different positions on the piano and record a 30-second take of each mic placement. Then listen back and decide which position works best.

A digital camera is a good way to help take notes to remember the various placements.
 
Well, one mic isnt exactly ideal for an acoustic piano. At least two would be suitable, one for the lower strings and one for the higher strings. You should at least each one somewhere between 6-12 inches above the piano strings. I know you asked for one mic, but one mic wont get you a great sound.

I think Dot's suggestion is straight to the point.
You should remember that nobody can give you a good suggestion. The piano is probably the most difficult instrument to record. Everything--the piano itself, room, type of music, performer, microphone, equipment, etc.--should be taken into account.
I record almost exclusively classical piano. I usually record in the hall and on the piano I myself gave many concerts, but still, every time I spent at least a few hours finding a right micing for certain composers and type of music. I usually try to attend a concert of the performer before the recording, so I have an idea as to his/ hers style of performing. According to that, before the recording I narrow down the mics choice to a few, which in my mind would suit this particular peformer the best. I have about a dozen ribbons, and another dozen of condensers--SDs, LDs, different patterns, etc.
I strongly believe, only your intuition, based on many hours of trials and errors could tell you what direction to go.
Engage your ears and don't be afraid experimenting, and I am sure you will find what you are looking for.

BTW guys, just wanted to show off.
The disc "Mirroirs" of pianist Robert Hamilton, I recorded last year, got very good reviwes, was called the calssical disc of the week by Arizona Republic, and now is being nominated for Grammy.

Very impressive Marik. Nice to know a specialist is in the house! When you have a great player, a great hall, and a great piano, what is your go to signal chain and mic placement? (I know you'll answer it depends, but you must have some favourites...:D)
