I think that the reason the guitar did become the dominant instrument in popular music is because more than any other instrument {the possible exception being the drums} it carries the capacity to so embrace two chord rawness, ham fisted simplicity, avant garde discordant bashing and concerto like nimble fingered delicacy and somehow, satisfy all those states.
I wouldn't disagree with that. And whether musicians are inherently insecure, I can't say. I've never thought of that before so I have no opinion on it. I believe though, that before the guitar became the rockstar instrument, something caused it to become that way and part of that something was it's versatility and simplicity. It didn't require the same kind of application as violin, piano, bagpipes and various horns. It was simple, you could master 3 chords on your first day and play loads of songs and even write a song if you were that way inclined. And electricity took it to a new level. And as it was becoming popular in a 'breaking out' kind of era, I guess guitarists took it out of it's accompaniest role to the levels we know and love/dismiss today.
