live dj mixing

I was wondering, how are typical dj's setup for live mixing? I mean, I watched the guy at the bar last night with his IBook, which I dont think had 2 outputs on his sound card (mabye I'm wrong), or even if he did, is it possible to assign an output to a certain track playing on your computer and a second one to another output using specialized software, to send it into the mixer? Or do they just plug a CD player into the mixer with the computer running and do their best at synchronising it all...hm, my bet is they use software to split the tracks and shoot em to the mixer, but then you'd need a good sound card...conclusion: I'm confused and would very very much appreciate if someone could clarify all this.

Some options:

Two turntables and a mixer
Two turntables, a mixer, and Stanton's final scratch. Lets you play MP3 and Wave files on your computer like they were records, with scratching, etc.
Two DJ CD players and a mixer, which let you treat discs like vinyl.

I'm sure there are other things out there.
