I'll save you guys all the trouble.
Here's how all of your favorite sessions went:
1) A bunch of musicians got together. Most likely in a recording studio.
2) They all had instruments with them, and rehearsed their material for a while.
3) Some guy pointed a bunch of mics at their stuff.
4) The band / artists played music.
5) The guy pointing mics -- or his boss -- recorded what the musicians were playing.
And that's pretty much it ! ! ! !

The Beatles sessions guide is just about as cool as it gets for this.
I know Tom Waits uses untreated rooms...usually spaces chosen for their echo, and he uses lots of compression and spent the 80's singing into a Green Bullet.
