What kind of mixer are you using?
I ask because you will need to reference the level on each channel to 0db using PFL or Solo (whichever it is called on your mixer).
You turn the channel on, turn down the fader for that channel & aux sends, and adjust the gain pot while watching your meter.
Set each to a 0db reference.
Your stereo outputs a 1VRMS line level signal. And it is unbalanced at that. Blanced signals are lower gain than unbalanced, but blanced provides lower noize and sound quality.
Dial in your channels before trying to mix
