The hammers rest against the strings when no keys are pressed. You'll still hear some amount of sympathetic ringing if it's near a kick drum or loud amp, though.
There's usually a pedal that further dampens strings for quiet rehearsal or a softened tone.
I think it drops a cushioned bar across all of the strings, in addition to the hammers resting on the strings.
