Certainly, stereo micing is worth a try. Until then, do you have a parametric eq? If so, try boosting a fairly narrow band at around 3K or 5K, which will increase the percussive sound of the pick (or fingernails) hitting the strings.
 
slim, you're the man. that's exactly what i wanted to know. the only parametric eq i have is on computer software, but that will work

For a nice wide thick sound especially on the strumming, check out the AT3525. For more detail in the highs (which you will probaby want and wont get if you leave as is) boost the highs at 12k and moderately boost the hi mids at 3k,,, 4db, or as needed till you get a balance bet thick and detailed.
