switch out the stock pups for either Gibson P90's or PAF's. I have a 2008 Epiphone ES 175 Reissue...the stock pickups are slightly bright, but I just cut back on the tone a bit and I'm fine. BTW...my ES 175 is a beautiful guitar! I am still very surprised at how nice it looks and plays (I also own a Gibson ES 135, and a Gibson Les Paul Studio and my Epiphone can hang with those guys just fine!).
It is not an easy job, all of the wiring and pots must be removed through the 'F' holes and many can only use the mini size pots due to the small F hole size. I just removed the pots and switch for cleaning on my Sheraton a few years back and that alone was quite a task.
P-90 pickups are really great pickups and have a distinct vintage sound-in my opinion.
