computer recording set up with 16 ch mixer

I am trying to figure out the best way to record to my pc. i have a good 16 channel mixer that i want to use to record into my pc, but i want individual tracks recording into my computer. I also would prefer to use a pro tools le system. I have heard that i can go out of the ch inserts on my mixer, and go into the inputs of a pro tools interface, such as a digi 002 rack, and have 8 individual channels recording simultaneous. is this true? If so, do i need any special cables. I have never though of channel inserts to be used as outputs. Any help is appreciated.
