First off, good for you for getting a "nice" patch bay. That's a quality piece that should give you good service for a long time. Even the 1/4" - 1/4" Neutrik just has higher quality components in it than anything near (or especially below) that price range.
On cables, I'm a big fan of ones with wire in them. I know that sounds lame, but I've run so many tests with my "electrical gurus" on this cable and that cable... I use Hosa snakes for 90% of anything that isn't going to move. Of course, the path they take is at least as important as the quality of the cable - Keep as far away from PSU's as possible, and cross AC lines at a 90 degree angle, etc. If you've got dirty power going on, then a premium cable may benefit you more...
On the patch cables, get some nice ones. Cheapos WILL fail and fail fast. Brands? Whatever seems a bit more heavy duty.
Obviously, if budget isn't a concern, go ahead and get Mogami or Monster cable. I have to say that or I'll get flamed by Monster & Mogami fans...
Mic cables - Don't skimp, but don't go bonkers. You can spend $20 on one cable and $100 on another and only hear $0.01 difference - if any at all. Again, if budget allows, go nicer. More expensive cabling usually has higher quality control standards, nicer plugs, etc.
THAT BEING SAID - The cables on my mastering path are ridiculously expensive, hand-soldered, gold-plated, yada, yada, yada. All 9 or so feet of it. I'm sure that some measuring tool at M.I.T. will tell me that path is cleaner than most. However, if I was building another recording studio, I have no problem at all keeping "fiscally responsible" with cable that isn't going to take a beating.
