check out the poll in the computer and soundcard forum. There were tons of responses and lots of software packages to choose from. Ithink cool edit was up there for sure, but cakewalk was as well.
try nuendo v2 out, its pretty nice i think. The vst mixer is a great tool and i like how the effects are layed out and stuff. Its very easy. And also you can do 5.1 mixes with version 2(v2) if you into that kinda thing.
I like Digital Performer and it's little brother AudioDesk. Of course, I work on a Mac so this is probably a minority opinion. I used to run Cubase VST but I found it difficult compared to DP. I still use it sometimes for the VST Mastering Edition plugins.

I moved from Cool Edit 2.0 to Samplitude 7 recently and am VERY happy. Expensive, but very well put together if you don't need TOO much MIDI capabilities.
The key is to make sure it does the stuff you need it to do, and does it relatively quickly and reliably (without crashing your system, etc.), and is intuitive for you to use.
