Audio Interface Software: Good or Bad

I've been looking at usb audio interfaces that are between $100-$400. Most of the audio interfaces come with some type of recording software and plug-ins with some effects. So then what is the point of buying the standalone DAW software such as SONAR or Pro Tools?

P.S. Dumb question: Do MIDI controllers act as audio interfaces?
 
Firstly the software that come bundled is usually an older version or a cut-down version that has limitations. Cubase LE (which comes bundled with many interfaces) has limits on track, bus and effects counts, amongst other things.

Secondly is simply choice - the interface may come bundled with one software package, but what if you prefer another?

MIDI controllers are not interfaces. I've seen one or two with very basic interfaces built in, but nothing you'd want to use as a replacement for a dedicated soundcard / interface. On the other hand, some interfaces have MIDI I/O built in.
