Are you using a good turntable which doesnt contribute any of its own noise to the output?

Are you using the the right stylus (ie: not just an ordinary LP stylus but a larger radius stylus matched to the groove in the 78 you are dealing with)?

Are you properly wet cleaning the disc before playing?

Are you setting stylus tracking force for the setup you have?

Are you adjusting tracking bias compensation correctly?

Are you using the correct replay EQ for the 78 disc you are playing, not just standard RIAA EQ?

You cannot truly separate the music from the remaining surface noise. They are locked together. Denoising software cuts down the noise but often also cuts down the music. A low pass filter, used correctly, can reduce high frequency noise without reducing program high frequencies.

You can reduce many small clicks with declicking software without much affecting the music. But used too aggressively, the declicker will add audible distortion.
