How hard is it to add a 9v power adapter jack to a pedal that only has a battery hook up? It doesn't seem like it would be difficult, but I'd like to hear about it from someone that knows more about electronics than me....

I did it to some of my pedals by just drilling a hole, and mounting a jack with a "9V battery hat" (you know the kind that you usually connect the battery to) soldered reverse polarity. When I want to run the adapter I connect the two "hats" with each other. If I need to go battery I just detach them and use the pedal exactly like it was built.

Never had a problem with this approach. As long as the adapter is the right polarity, can deliver enough current and is clean enough I can't think of any reason why it should.

btw. If you want a more "automatic" approach. IOW - let the battery stay in there and kick in if you disconnect the plug. I think it's smartest to use a jack that disconnects the battery while plugged in. You'd probably be allright anyway - but I'd play it safe.
