When you record on two chanells, panned L/R, and you play back, you'll hear the snare and hi hat on the left, and the floor tom and ride on the right, and the ride toms in the middle, for example.
I think the soundcard is OK...
you're looking for a menu in Cool Edit to allow monitoring on playback. Sorry, I've never used it, so I don't know where to look. :(
I have a PC that when I post mp3s at 128 kbps on Soundclick they sound OK, but when I use my mac @ 128 it sounds like butt. They sound OK on disc, but streaming from soundclick is unbearable.

yes. To control the strength of the signal before you record it. But stand-alone pre's are better for the quality of the signal, but you won't need one until you really get serious about recording.

you can postion each recorded track in the stereo field wherever you want to, on mixdown.
You can also record onto two tracks and get a stereo recording of, let's say, a drum set. You'd hear the high hat on the right side and the ride cymbal on the left, for instance.
Somebody is selling those click dots...
