Having real analog equipment from the 50's would help. Maybe try out a coated bass drum batter head. I think the drummer on that albumn is Leroy Williams. I am not sure his kit specks, but you might be able to find them somewhere.

The mic? No, I would be more concerned with what pre you are plugging that cable into. Phantom power shorted on two leads could fry the pre, but I think the mic itself would be fust fine.
There is absolutely nothing wrong with using garage band. I use it every day. The newest version gives you just about the same amount of control and flexibility as other software that cost WWWWAAAAAAAYYYYYYYY more. Unfortunately, PC dosnt make a free software as cool as gband that actually...

You are on the right track as far as panning the composite instruments to create a stereo image, unfortunately GBand does not allow you to combine those tracks back into one. But you can just simply leave them in that state, and when you export them, they will be in stereo format.
Maybe shielding around the electronics in the amp itself? I have never heard it through a guitar cab, I have, though, through a really cheap home stereo (not on the tuner input).
With the track selected, in track info, you can choose which presonus input you want. You have to unselect the record button on the first track to allow you to activate the input on another track. If you search in the help menu, you can find some helpful hints on eliminating latency . I havnt...
