This is because you have set Cubase to use a mono output. Remove the two outputs you have, add a stereo output instead.

Either that, or you have some normal normalization thing going on on your computers output. Usually on the sound card properties.

I often feel that gating removes some of the attack. I'd rather just use some clever editing and fading, perhaps use some EQ'd reveb if you want more ringing without having hear the bleed.

The level fader in your DAW should only control the output. Input gain should be a separate entity. Are you talking about monitoring here? If so, I'd just turn the other stuff down to be safe, and rather bring it back up during mixing.
