    How can I record 8 tracks at the same time but not mix them into one track?

    Unless that mixer has a USB or firewire connection then I don't think you'd be able to. Other than buying a large mixer with USB or firewire connectivity, you would need to get an audio interface with 8 analogue inputs such as the Lexicon U82S.
