What's the minimum setup needed to record at home

Typically, you can get away with a microphone, a decent audio interface (aka I/O), a reasonably fast computer, audio software for recording and mixing, and powered studio monitors (speakers)to hear what you're doing. With a decent large diaphragm condenser, you'll be able to record vocals, acoustic guitars and other acoustic instruments

Nah. All you need is a H4n and pair of headphones.
 
Zoom H4 has a little brother called the H1. Even cheaper. Essentially it's just a stereo mic that can record itself.
