Why mixdown to a separate cassette deck? (TASCAM 414 MKII)

It depends on how many tracks you have to play with.

On a Portastudio, with only 4 tracks, I'd suggest assigning them to one track and doing a careful pre-mix while tracking to save some space for other stuff.

Yeah, I'll usually combine those two sources down to one track.

That becomes part of my "signature" sound. Heh.

True, as GFM said, if I had unlimited tracks to play with, I might put the DI source and ambient-mic source down to separate tracks,... but that's almost never the case.

I always mike my amp instead of plugging directly into my porta.I tried it and it totally sucked.On the back of your porta you have two line out rca jacks. plug your cords from these outputs to the"in" rca jacks on your mixdown deck and press play on the porta and away you go. :)
