Why is the piano sound so bad through my new A&H ZED-10FX mixer?

I read the manual from cover to cover several times, it says.........

"Listen switches the channel signal to the headphones or monitor output circuit for checking the channel signal"

It would have saved me a bunch of time if it had said that it also sums the stereo to mono. There is also no mention of the word "solo" To a beginner like me the implication was clear - you need to push the listen button (it also has a graphic of headphones) to use the phones. I guess only experts are allowed to use this forum.

Hell, you're in the newbies forum to boot. I wouldn't be discouraged by one angry poster - usually people are quite helpful in these forums, and the manual clearly doesn't state that the Listen function sums to mono. Ah well...

Followed by "Takes the signal after the EQ but before the Level control (so you can check the signal before adding it to Mix or Record)". It seems to suggest the next step is to add the signal to Mix or Record. But the terminology is slightly odd so I can see how you might not have understood it even though you read it. "Solo" or "PFL" (which means pre-fader listen) would have been the more common terms for that function.
