Only when I am completely resampling the kit and the samples sound too different from the real sounds.
When you do that it colapses the 'space' and makes everything sound flat and 2 dimensional.

Hey does anybody here scoot the Overhead tracks up a few samples to get them into line with the snare, hat, kick, and toms?

At times, but you should check phase while recording. Use the 3:1 rule for overheads. I have a tendancy to mix the individual tracks TO the overheads rather than the other way around, and will use phase correction if the individual tracks sound thin when added.

I will often use this technique to align a DIed bass track with and miced bass amp track though to correct the phase between the 2.
