What do I need and can I build it?

I've been researching a new DAW for my studio set up, which is:

1) I record through a Soundtracs Topaz 24 and/or a DMP3 pre to a HD24.
2) I use Cakewalk Home Studio 2XL to do some editing of the wavs and do final mixes on the Topaz using various outboard compressors and effects.

I usually just record my own band, and a few of the other local acts but have also done some more electronic based music.

What I'd like to do eventually is have the ability to:

1) Hook up my PC to my monitors and mix straight from Cakewalk using the various tools it can provide.
2) Maybe even record up to 8 tracks simultaniously to the PC...

My problem is that everytime I start to come up with a configuration for a possible DAW, I feel like I go way overboard. Comments like "as much memory as you can get" seem to push me into systems that cost well over $1500 and are probably way more than I need.

So any thoughts on a system for around $750? Also, I'm fairly handy with a soldering iron etc. should I consider building it myself?
