(yes, i cross posted this. i wanted a different perspective from real drummers.)

i program 2 drum track(s) in Pro Tools via MIDI. (One for Kick and one for everything else.)
Then I send it to my sound module and record the audio back in PT on 2 stereo tracks. (nothing new, nothing special)

My question is: should i designate separate audio tracks for EACH drum sound (snare/high hat/cymbals, ect...) or continue stuffing it on to 2 tracks like I've been doing?

Ultimately, I would do each sound in a separate track since it will make EQ and effects much more effective if you can adjust them for each sound individually. For tracking or if they are just there as a basis for other parts, it does not matter
 
Agreed. I would never cram that much drums into one track unless I had no choice. What happens if you need more highs in the cymbals? You'll have to boost it on everything. Adding compression could make that mix a saggy mess. You should have a track dedicated to the kick, one for snare, one for the toms (these could be combined if you don't have the mixing real estate), one for each overhead, room mics, ect.
