There are a lot of ways to do this well. All I know is what I've done, and that involved a similar budget.

My favorite setup (so far, given my gear) is an MXL 603s close miced on the acoustic guitar, mixed with a Studio Projects B1 a couple of feet away. I also use a B1 for vocals, micing an amp, micing a set of three amps (set 'em up like a U-shape on the stage and suspend the SP B1 in the center - works great), have used it with a pair of 603s on a drumkit, and for all kinds of other things. The SP B1 has turned into one of my live sound workhorse mics and it's a good thing I got a pair.

There are better mics for vocals - and if you want to spend the money, better mics for anything. But for a $300 budget doing acoustic guitar and voice, it's pretty hard to go wrong with a pair of MXL 603s ($200 street price with shockmounts) and an SP B1. That's $290. Each mic gives me more than I thought it would, not less.

Be careful handling these by the way; any condenser mic is fragile. Treat 'em with care.
 
Looks like you can get the MC012s for around $100 a piece on ebay. I'd get two of those and a v67 for vocals on that budget. I really do not care for the 603s on acoustic guitar much.
