Can I offer clients a service for their kids to come in and sing to karaoke versions of pop songs purchased from iTunes? There are many of these versions out there. They would not be allowed to sell these recordings, obviously, but could they come in to my studio and record themselves singing the vocal tracks? It would be for their personal use. You know... give to grandma for Christmas, keepsakes (like school pictures). Or would I have to pay royalties each time someone recorded themselves singing to a particular song?

You could offer the service, but you'd be infringing multiple copyrights. You need a license for the recording and the underlying song.

What if they came in with a pianist and they covered a song? You're saying I would be infringing? Or they would be if they sold it?

It depends. True covers come under a compulsory license.

Download from a site that has the rights to sell the backing tracks.

I found this site recently, and used it for recording an audition video for 'The Voice'.

You can decide which tracks you wish to use as well. Backing vocals, drums only, piano only, etc...
