Consider the scenario where you might wish to record audio primarily for CD, but perhaps use that same audio in video project.

Is there any particular disadvantage to recording/processing at 44.1k, and just exporting at 48k for video compatibility?

I dont know if this is correct, but Ive been told, if you plan on changing the audio like that, you should record at the higher rate and then downsample. In other words, record at 48k or higher (most DAWs support many different qualities) and the downsample to 44.1 for the purpose of the CD. If thats wrong, I'm sure someone will correct me, if its right, I'm sure someone will elaborate.

Unless you are going to have to synch (as in matching lip movementss) it to video, dont worry about it.
Just converting it to use it in a video will cause no problems.

Happens all the time. And yes - Most resampling flies up (to lowest common multiple) then down to the new target. Still, when the target is higher, there usually aren't any audible artifacts (not necessarily the same when going the other way).
