Ugh... My brainnnn...

I can type over 95 words a minute and I've never taken a typing class. Had a computer for the first time when I was around 12.

Can this relate to guitar? Can I be good without knowing any of this crazy scientific stuff and just jam and figure out which notes sound good, how to play by ear and such?

I think you have to get to the point where somebody can tell you what key a song is in, and the progression (as in i-V-i-IV-VII-I or something) and you can follow. Or at least be able to read a chart with lyrics & chord names. Otherwise, it would bug the heck out of me to be in a band with said guitarist. Sure, there are guys that can learn everything by ear and can't read, but that doesn't mean that I want to hum an entire tune to them so they can learn it. Especially since I'm not real good at humming chords ;)
 
For the experienced players out there, is it possible to be GOOD or even amazing at guitar just by being self taught?

Yes, amazing is quite possible. :)

Don't dismiss the power that a knowledge of notation and the pre-notated totality of Guitar Knowledge out there will bring.

But as a diehard Self Taught guitarist, I'd remind any student to:

0) Know all the chords in every position in every key.
1) Pay close attention to the tone you are getting in return for each pluck.
2) Strive toward the ability to play a line that exists in your head BEFORE
it sees the light of day on your axe.

Hell Yeah. The same muscle memory will reward you with facility at playing all sorts of scales at high speed, which forms the ability to improvise over a moving background chord pattern.
