System Requirements & Choice

My current system centers around the Korg D8 (Hey it's an okay unit and it does the job).
I'm looking to expand and get into a computer based system for unlimited tracks.
Workstation is a T3
Percussion: T3 and/or Roland R8
SP100 and various guitars.
Mics: Beta 57 and EV457
What I'd like to know is a recommendation for software: ie. Cakewalk, ProTools, whatever??
Please let's not get into an argument about PC vs Mac, I'd just like some honest opinions of the software & why you like it.
