It seems like you should be getting a fuller richer sound than that from a Gibson jumbo. It sounded kind of dull and lifeless and at times out of tune as well. Can't tell if the guitar was out of tune or if it was your technique that was bending strings out of tune. Where was the mic placed? I'd experiment with moving it around a little in search of a fuller sound, maybe add a second mic as well.
