Jal - I think I've posted this rave before but here we go again
Have you ever tried MS Stereo mikeing?
What you need is a cardiod mike and a figure 8 mike. you set them up so the cardiod is facing your instrument and the figure 8 is at 90 degrees to it and as close to the other as possible. You have to figure out a way of getting two splits of the fig 8 mike so that you can bring it up on the console with one feed out of phase to the other and you pan one left and one right. You then pan the cardiod mike center and as you add the two fig 8 feeds you will notice the stereo image expand. This effect is a true stereo because when you mono the signal the left and right fig 8 feeds cancel each other and you are left with the mono cardiod mike. It's a really true stereo and is great for drum ambience mikes, guitar ambience and drum overheads etc. It's fully drawn in my manual
