I reckon your old system is fine as a recording PC. I use a P3 866 with 512mb and I find it perfectly adequate. You may start having problems if you run lots of processor intensive plugins but I havent had any. I also use win98se so I am not sure what it would be like under xp. But since you have a new PC why not use it in a dual boot setup.
You are much better off spending less money on the pc on more on the soundcard, mics, instruments, speakers etc if recording is your only goal. You probably didnt even need a new pc, the old one is good enough - imagine all the cool studio gear you could get with $3000 . Anyway you probably needed the new pc for other reasons.

The only reason that got me to get the new pc was when i started mucking around with recording video footage from handycam to put on dvd
Old pc is a bit slow for video and also not enough room
But i havnt had problems with music.
I will try all my options and will settle for the best one i supose
