Almost any keyboard with midi I/O will work. That is as far as manipulating midi data. There are plenty of softsynths out there depending on what you are looking for as far as sounds goes for audio. If you have a sound card that supports Soundfonts you could be up and running in no time...
I am very new to recording. I plan to purchase the M-Audio Delta 44 Sound Card. I am looking for a good quality-sounding keyboard. Any specific brands and models would be appreciated. I tend to write country.

IMO, I'm not affiliated with particular manufacturer, but I think Korg X5D is VERRRRYYY easy yet powerfull for starting a new chalange.
And FYI, Delta 44 is great audio card, however, it has no MIDI port. Then you'll need extra bucks on MIDI card. But wait a minute... Korg X5D has it's own unique Mac/Windows "MIDI interface", using special AG-01 cable pluged into one of your current serial port. So, it requires no more extra MIDI port...
