Hi. Im thinking of getting a Shure SM7 and found one on ebay w/ out the wind screen. How important is this to the mic? and can it be easily replaced?

There are two official Shure windscreens for the SM7, one is the socklike A7WS (which is the one I had), that's intended for close-talk DJ/VO stuff, but there's also the more sensible RK345. They are $15-$25, available from many dealers.
I rarely use my windscreen on mine. I agree with Big Kenny. Get the SM7 and buy a Stedman. I think the windscreen makes a lot more sense in a broadcast environment, rather than a studio.
IMHO the SM7 works just fine for acoustic guitars -- but you do need a preamp with some gain. I use it all the time for this. If you want another mic that works real well on acoustic instruments, try a Groove Tubes AM-40 or GT-44 (same mic). It's a MD tube mic that sounds just great on acoustic instruments and can often be found pretty reasonably on e-bay -- @$250 or so.
