Signal breakup in decay

I recorded an acoustic guitar yesterday for the first time using a Shure KSM27. While listening to the playback, I was very pleased with the quality of tone reproduction, but then as the last note decayed, the signal broke up in a most unpleasant way. I don't know how to describe it, really, but it sounded a little crunchy and gravelly, almost as if the signal were breaking down into little bits, and each bit was dropping out of the audible range at a different time.

I re-recorded a few more times and got the same results. I tried different cables and different mics (even a dynamic mic) and got pretty much the same result.

What's the likely culprit, and how do I kill it?
 
Are you recording digitally? With what? What sample rate/bit depth?
