How does one do this? I know I have heard of people replacing, say, there snare hits with a different sample of a snare sound, but what software does this??

there's a free plugin that does it too (well converts it to midi anyhoo, good enough) http://hem.bredband.net/tbtaudio/ekittrigger.html I just made some diy triggers and it works pretty well with battery
