I was told that producers would record a track then play it through a speaker and another mic would record the sound coming from the speaker. Is this a real thing they did back then?

Recording an electric instrument direct then later sending the track through an amp is called reamping.
 
I'm thinking you are referring to one way to get reverb ala reverb chamber...this could be a variety of shapes but was often a bright hard-surfaced room or hallway, and the monitor would go at one end and the mic at the other.
