i did an acoustic singer-songwriter demo a little while back, and here's how i went about it...
since most people who play this music will basically insist on both playing and singing at the same time, since the flow of one dictates the other, i recorded a quick track of her both playing and singing at the same time
then i had her play guitar to the track, while i recorded a stereo guitar track
then we overdubbed some clean, bleed-less vocals to the original take
then i mixed the stereo acoustic track and overdubbed vocals, tossed out the original track, and everyone was happy
