Recording problems with Tascam US-122mkii

I'm trying to use the Tascam US-122mkii interface with cubase LE 4 and a rode NT-1. Everything is going fine, but I cannot record in stereo. I only have one mic, but I want to be able to manipulate the panning of the tracks, and at this stage I have only been able to record either through the L or R track. The tascam has an L and an R XLR input, but i only have one mic and I still want to be able to manipulate the stereo track. Any help?
