recording live bands and choirs...

Won't be comming of of any boards, just live acoustic-bluegrass bands and some church choir stuff.

My plan:

Bluegrass Bands
two 603s and two ecm8000s. Record each on its own track and kill what I don't like. I understand that the 8000s are omni, but I think I'm gonna need that to pick up some of the instruments on stage.

Church Choir-Mainly small African American churches around Mississippi. Will the two 603s work for this?

What's good for micing an acoustic piano (some uprights and some baby grands)

Help !!! I'm gonna start doing this in a couple of months so time isn't critical. I would like to start doing some testing first and just need a good starting point.

Recording live is tricky, but my experience with piano mics might help. I got a great sound from both an upright and a baby grand using 2 SM 57's and an over head condenser. 1st was pointed into the sound chamber area at a 45 degree angle one was on the other side, slightly farther away and pointed a little more squarely at the piano. The over head did a great job getting sound without the hammering sounds of the keys!
