A mic on each drum,some mics would do 2 drums, like both toms.
Use a small mixer as a premixer, then mix down to the one track, no fixing in the mix once this is done though.

All drums on one track is kind of hard to do well, but not impossible.
But sometimes I'll mix drum tracks to one channel. If I do I mike the cymbals separately and cut all frequencies on those mikes but upper end, then mike the kick and boost bass freq's and cut highs. I mike snare and toms with boosted mids and cut low end a bit.
I do all this and try to get a real good balance in mono or stereo.
Then later on if necessary, I still have some mix control over the drum kit by EQ changes. (Highs for Cymbals, Mids snare, and bass for kick) It really works very well, and most time it just takes a small tweak to level out the kit sound.
