How difficult and expensive would it be to convert analog outs on an interface into digital outs? Probably close to impossible but I was just curious. My pops is really experienced with audio and computers and I would be willing to help him. Is this just a silly dream?

Analog-to-digital equipment is common, its the resolution that matters (in terms of quality and price).
