I don't really know what kind environment I should be recording in. Should I want to have lots of open air(ie, the dining room in my house, good amounts of reverb) or a smaller , lower ceiling room. ? mainly recording drums, electric guitars, vocals, electric bass.

if the room is untreated, i'd say go for the biggest room you can. but keep in mind i'm no expert. but i would think that the biggest, most open room you can record in would probably sound better than a small room with lower cielings.

It depends on the sound you are looking for and how it sits into the music or vice versa e.g. a drum kit will sound larger in a big room but you may want to isolate it in a smaller room for a tighter sound. Experiment with all the environments you have.

Lots of other variables other than room size.

Shape of space, types of surfaces, other things in the room (furniture etc.) also contribute significantly to the room's acoustic character.
