Quality difference?

If I have a great sounding: room,mic,preamp,amp,insturment,musician,eqs,compressor..ect..

then does the interface make a difference in the sound quality? Like a lexicon or an mbox compared to a much higher-end interface?
 
Not the interfaces per se, but the A/D convertors in the interface sure do. If you have a standalone A/D and D/A covertors and just use the interface's digital inputs (slaved to the external clock) then the answer is probably no.
 
Eventually, everything will matter. There will always be a weak link. Most people would probably not notice the difference in converters, but once your ears and the rest of your signal chain get to that point, you will notice. However, don't discount recording skill as an important factor. If you don't know how to use the equipment properly, you're still just a monkey with a typewriter.
