Percussions! Where are they?! help~

Hello.
I am relatively new to pc recording.
I am working on arranging midi's out there and making the music from ear onto the PC.

*I have a ghetto MIDI roland JV series keyboard which I just got so I have NO IDEA how to use more than just voices.
*I was using (on my friend's comp) SB Live! and this old program called Encore 4.0

My friend and I had trouble working with DRUMS. My music consists of flute, synth strings, slap bass, choir ahhs, nylonGtr, grand piano, and drums. We tried to figure out HOW to get these drum sounds that we KNOW are in his soundfonts, and at last we found out there r two drum sets we can use. generic MIDI and Alexis. But we couldn't really get all that many sounds. How can I get many drum sets and play around with them freely?

And my keyboard's drum sucks cuz ... i dunno something's wrong and it's not there no more.

Anyone who's experienced and have laced their tracks with nice percussions, plz let me know HOW you track it (all in one staff or u create diff. staff? then how about channel? for us, the ONLY way we could get drum sound to come out was by choosing "a10" on the channel. NO clue why but it just worked) and what are the common drums you use? also, recommend me some stuff that can get me nice drum sounds... I think soundblaster Live should do just fine... am I wrong? (well, I could only get two kinds of percussion maps... - generic midi and alexsis or something)
