Anyone know how people do this kind of web collaboration:

I've seen a classical collaboration also like this. They must have a click track & an arrangement...

As you say, probably a click track and an arrangement. Possible to start from a guitar part or vocal line and then go back and forwards between musicians, adding an idea a bit at a time.
Ultimate recording, probably start with a click track and one instrument, send it off to the next guy, repeat.
