Omnidirectional Question

I have a likely stupid question. On an omni mic, does it color the sound if your source is off axis?

That depends, mostly on diaphragm size and operating principle. Large dual-diaphragm mics with switchable patterns will only be 'kinda' omni off-axis, and thus can be quite colored. Single-diaphragm true pressure omnis tend to be much more consistent off-axis.
